In this blog, we will tell you the method of making Ragda Chaat, which we have made many times ourselves, very tasty and flavourful.So today’s recipe is going to be very easy, which we are going to make very easily, what makes ragda chaat tasty is its spice, which if you make at home by yourself, then it is in ragda chaat. The taste of Ragda Chaat is such that one who eats it once, then cannot live without it, be it old or young. So let’s make matar ki chaat, ragda chaat. This chaat recipe has multiple name accross India, and this is my way of representing it Ingredients:- For Ragda chatchat White pea:- 500 gm Potatos:- 250 gm Salt:- As taste Sugar:- 1 TSP Ghee:- 50 gm Turmeric powder:- 1 TSP Green chilli:- 3-5 Asafoetida:- 2 gm Kashmiri red chilli powder:- 12 gm Bay leaf:- 3-4 Water:- 4 cups For chat tadka:- Ginger:- 2 inch Greeen chilli :- 50 gm Asafoetida:- 2 gm Tomatao chutney :- Tomato:- 500 gm Ginger:- 1 inch Oil:- 20 ml Asafoetida :- 2 gm Kashmiri red chilli powder: 15 gm Vingear:- 25 gm Salt:- As taste Suger:- 25 gm water:- 140 gm Tomato ketchup :- as reqired Ragada chat masala:- Salt:- As taste Coriender seeds:- 15 gm Fennel.seeds:- 15 gm jeera powder:- 15 gm Black peppercorns:- 15 gm Green cardamom:- 3 Nos Asafoetida :- 2 gm Dry mango powder:- 30 gm Sugar:- 1 tsp Assembly and garnishing :- Small chopped onion Unripe mango slices coriender sprig lemon juice ginger(peeled and julienned Green chilies chopped Potato wafer Pomegranate pearls Nylon sev Ratlami sev Kashmiri red chilli powder Prepared ragda Prepared chat masala Chopped onion Sweetened curd Green chutney Tomato chutney 1/2 inch ginger(peeled and julienned Coriender leaves Chopped green chilis Prepared chat masala Process of making:- Ragda chat For Ragda:- 1:- First wash the potatoes, peel them and then cut them into pieces so that they can be boiled quickly. 2:- Take a pressure cooker and put white gram, potato, salt, sugar, ghee, green chili, turmeric powder, asafoetida, bay leaf in the pressure cooker and cook it well till three to four whistles come.As long as the ragda chaat is being prepared, we will prepare for tempering it. Now for tempering, first of all finely chop the green chillies and ginger. Now take a pan and put ghee in it and when the ghee becomes hot, add asafoetida, then add chopped ginger and chillies and fry well until it turns brown, then add it to the chaat and temper it. Now mash the ragda chaat well and cook it for 7-8 minutes, then cover it and keep it for further processing. Tomato chutney :- Also can use this chutney:- dates and taramind chutney 1:- To make tomato chutney, first take tomatoes and ginger. Will chop both of them well. Now take a pan and put oil in it, when the oil becomes hot, then add asafoetida and ginger and cook it well, now adnd chopped tomatoes, Kashmiri red chili powder, vinegar, salt, sugar, and water and cook it. 2:- When the tomato is cooked well, then grind it well with the help of a hand blender or mixer. 3:- Now filter the blended tomato chutney, cover it and keep it for further. For chat masala:- To make chaat masala, take a pan. Add coriander seeds, fennel seeds, cumin seeds, black peppercorns, cardamom, asafoetida, dry mango powder to the pan. Roast it on low flame, then keep it in a pan to cool down, when it cools down, add sugar and grind it coarsely in the mixer. For Assembly :- Ragda chat 1:- So all your chaat ingredients are ready. Now we will make it final. So first of all take a ball or take a plate then put the prepared ragda in it, then add chaat masala, finely chopped coriander, leaves, peeled and julienned ginger, tomato chutney, green chutney, curd, chopped onion, nylon sev, Ratlami sev, Put semi ripe raw mango, coriander leaves, pomegranate seeds, potato wafers. Now mix everything with the help of a spoon and serve hot.
