They are Ragda Puri, which is very famous in street food of India.Although there are many delicious dishes in India, but the ragda puri that is available on the street is something different.Ragda Puri is a very tasty food made of sour, sweet, salty and many types of spices.It is a very famous street food sold in the streets of India, which is made from a mixture of potatoes, chickpeas, spices and chutney.This dish is famous in India, from children to old people enjoy it to the fullest.

Ragda Chaat is mostly made in Maharashtra and Gujarat, people use it for breakfast.Ragda Chaat is a dish made of white peas, which people eat with great fervor.Ragda Chaat tops Indian street dish.

In this blog, we will tell you the method of making Ragda Chaat, which we have made many times ourselves, very tasty and flavourful.So today’s recipe is going to be very easy, which we are going to make very easily, what makes ragda chaat tasty is its spice, which if you make at home by yourself, then it is in ragda chaat.

So let’s make matar ki chaat, ragda chaat. This chaat recipe has multiple name accross India, and this is my way of representing it

Ingredients:-

For Ragda chatchat

White pea:- 500 gm

Potatos:- 250 gm

Salt:- As taste

Sugar:- 1 TSP

Ghee:- 50 gm

Turmeric powder:- 1 TSP

Green chilli:- 3-5

Asafoetida:- 2 gm

Kashmiri red chilli powder:- 12 gm

Bay leaf:- 3-4

Water:- 4 cups

For chat tadka:-

Ginger:- 2 inch

Greeen chilli :- 50 gm

Asafoetida:- 2 gm

Tomatao chutney :-

Tomato:- 500 gm

Ginger:- 1 inch

Oil:- 20 ml

Asafoetida :- 2 gm

Kashmiri red chilli powder: 15 gm

Vingear:- 25 gm

Salt:- As taste

Suger:- 25 gm

water:- 140 gm

Tomato ketchup :- as reqired

Salt:- As taste

Coriender seeds:- 15 gm

Fennel.seeds:- 15 gm

jeera powder:- 15 gm

Black peppercorns:- 15 gm

Green cardamom:- 3 Nos

Asafoetida :- 2 gm

Dry mango powder:- 30 gm

Sugar:- 1 tsp

Assembly and garnishing :-

Small chopped onion

Unripe mango slices

ginger(peeled and julienned

Process of making:- Ragda chat

For Ragda:-

1:- First wash the potatoes, peel them and then cut them into pieces so that they can be boiled quickly.

2:- Take a pressure cooker and put white gram, potato, salt, sugar, ghee, green chili, turmeric powder, asafoetida, bay leaf in the pressure cooker and cook it well till three to four whistles come.As long as the ragda chaat is being prepared, we will prepare for tempering it.

Now for tempering, first of all finely chop the green chillies and ginger. Now take a pan and put ghee in it and when the ghee becomes hot, add asafoetida, then add chopped ginger and chillies and fry well until it turns brown, then add it to the chaat and temper it.

Now mash the ragda chaat well and cook it for 7-8 minutes, then cover it and keep it for further processing.

1:- To make tomato chutney, first take tomatoes and ginger. Will chop both of them well. Now take a pan and put oil in it, when the oil becomes hot, then add asafoetida and ginger and cook it well, now adnd chopped tomatoes, Kashmiri red chili powder, vinegar, salt, sugar, and water and cook it.

2:- When the tomato is cooked well, then grind it well with the help of a hand blender or mixer.

3:- Now filter the blended tomato chutney, cover it and keep it for further.

For chat masala:-

To make chaat masala, take a pan. Add coriander seeds, fennel seeds, cumin seeds, black peppercorns, cardamom, asafoetida, dry mango powder to the pan. Roast it on low flame, then keep it in a pan to cool down, when it cools down, add sugar and grind it coarsely in the mixer.

1:- So all your chaat ingredients are ready. Now we will make it final. So first of all take a ball or take a plate then put the prepared ragda in it, then add chaat masala, finely chopped coriander, leaves, peeled and julienned ginger, tomato chutney, green chutney, curd, chopped onion, nylon sev, Ratlami sev, Put semi ripe raw mango, coriander leaves, pomegranate seeds, potato wafers.

Now mix everything with the help of a spoon and serve hot.

Garnishing of ragda:- Ragda is nothing without garnishng, when we garnishing ragda it looks delicious and some drops of lemon juice also makes sour and sugar in masala makes it sweet and chat masala in masala makes it fabolous.

How to cook ragda easy and fast way:-

For making ragda dont forget to soaked peas in water overnight ,because soaked peas cooks faster in comparison of dry peas, and use peeled potatos and dont cut potato in big or not in small size cut it in medium size.

Put the ragda ingradients in pressure cooker and cook for 3-4 whistles ,

When ragda is cooking makes tomato chutney , cut the ginger and tomato and now in a pan cook tomato using all the chutney ingradients ,now blend it in mixer or with hand blender and filter the tomato chutney and keep for futher use .

Ragda is cooked , now temper the ragda using green chilis and ginger fried in ghee.

Now makes masala for best test, befour grinding the masala first roast it using pan at medium heat and add sugar when masala ingradients becomes cool , dont overgring the chat masala

Now assemble the the ragda chat using onion , tomato ,Pomegranate pearls and using all the ingradients.
